Watermelon and Feta Salad
This summery salad is very refereshing, great as a starter or a side dish.
I first discovered it when I was home in Australia for Christmas one year (hence the santa plate in the background).
- 1 small watermelon
- 200g feta
- 1 small red onion (sliced)
- 1 bunch fresh mint (roughly chopped)

Peel and de-seed the watermelon. You can chop it in 2cm chunks or thin slices (as shown in the picture)

Peel and slice the red onion, can be in half moon slices or thinly diced

Place watermelon and red onion on a serving plate. Sprinkle over mint and crumble over feta cheese
I love this as it is without a dressing. You can also try a squeeze of lime juice and some olive oil or some balsamic vinegar is also nice.
If you don’t like red onion, leave that out – I’ve also seen this with added cucumber, rocket, pumpkin seeds or pistachio nuts – choose any that suit your taste.
